Guacamole served with baked sweet potatoes makes a super fast and easy dish and I couldn’t wait to share this recipe. I am a fitness enthusiast and this is my winning post workout meal. It fills me up for longer and I don’t feel like snacking after.
To make the recipe use ripe avocados and fresh ingredients. The guacamole can be served with anything you like; on its own, with tortilla crisps, baked potatoes or on a bed of salad.

2 medium sweet potatoes
2 ripe avocados
2-3 green onions
1 fresh lime
1/2 fresh red chili
2tbsp fresh coriander
1tsp smoked paprika
1tbsp olive oil
Pre-heat the oven to 200° degrees. Cut the sweet potatoes in half and cover in olive oil, salt and smoked paprika. Place the potatoes onto the oven tray and bake for 25-30 minutes until crispy.
In the medium bowl mix mashed avocado, chopped green onions, chopped fresh chili and chopped coriander. Add fresh lime juice and salt then mix well.
Serve the sweet potatoes with guacamole on top, squeeze over more lime for a fresh taste.
