Energy balls, super easy recipe and perfect snack that can be kept in the fridge for several weeks.
If you like me like exercising and need low calorie snacks to keep going this will be the perfect choice. It is much cheaper alternative to product offer in local shops and you can change the flavours and ingredients each time you make the energy balls. The base for this snack are dates and nuts.
Prep time: 10min | Serving: 20 balls
250g medjool dates
100g raw cashew nuts
20g dessicated coconut
Put cashew nuts in a food processor and blitz to crumbs then add dates and pulse to combine and the mixture forms a sticky dough.
Shape mixture into small sized balls and roll in dessicated coconut to coat. Put in the fridge to firm for approx. 30 minutes.
