Curly kale salad with spicy Harissa tofu

One of my favourite salads with healthy kale, ginger dressing and spicy tofu. This curly kale salad recipe is really worth trying and perfect if you would like to prepare a healthy and nutritious lunch box. If you are not keen on the ginger dressing you can squeeze half of fresh lime and mix it with the salad. This will make the kale softer and will add a nice fresh flavour to your dish.

 Spicy tofu

Ingredients

400g firm tofu (my favourite for this recipe is Cauldron Original)

2-3tbsp spicy Harissa (you can use homemade or ready made)

Method

Preheat the oven grill to 190 ° C

Drain tofu by placing it on the kitchen towels and putting something heavy on top for approx. 15 min.

Cut the tofu into 8 chunks and cover with Harissa.

Bake it on the over tray for approx. 25 min making sure you turn the tofu from time to time to bake evenly.

Let it cool before serving.


Ginger dressing

Ingredients

1 garlic clove minced

2tsp minced fresh ginger

2tbsp organic maple syrup

2tbsp fresh lime juice

1tbsp extra virgin olive oil

1tbsp cool water

Method

In the food processor combine all ingredients and mix them well.

This recipe will provide you with two serving so keep the dressing covered and store it in the fridge. Shake well before serving.

 


Salad

Ingredients

130g curly kale

4-6 red radishes

80g red cabbage

4 baby courgettes

1/4 medium red onion

 Method

Start with preparing kale by breaking or cutting the leaves from the stalk. Wash in the cool water and chop.

Cut whole cabbage in half and again into quarters. Remove the steam and slice into thin strips, then again cut all slices horizontally to shorten them.

Cut radishes into quarters, making sure you remove all green parts.

Slice baby courgettes and red onion into thin slices.

Mix all ingredients in the bowl and add 1/4 of the prepared earlier ginger dressing. The remaining 1/4 of the dressing use before serving. Remember you will only need 1/2 of the dressing which you prepared earlier.

Serve your curly kale salad with some proteins couch as baked tofu or lentils.
